Meatless Friday: Faster-Than-Takeout Roundup

These days, I’m all about fast dinners–but not fast food. I was recently asked to take on a long-term substitute teacher position in a Catholic school second grade class, and by the time school’s over for the day, I don’t have a lot of time to cook dinner before I have to get my kid to the soccer field or the theater for rehearsals.

Since my son is diabetic, pizza isn’t always the best dinner option for him. He does better with pizza at midday on an active day. Fortunately, we have plenty of meatless dinner options that are quick to make (or can be made ahead). I’ll have a few of these on my menu plan during the coming month.

Barbara Stein’s light spicy tilapia 1Light and Spicy Fish, which is quick to put together and cooks in the oven in 20 to 30 minutes. Just add rice and a vegetable for an easy meal.

Jenna Hines’ Bean Burritos, a pantry-friendly (and budget-friendly) choice for a meatless meal.
